and so it began...

Six years have passed since our first date. (SIX!) The past six years of my life have been full of joy, love, and surprises. And I'm thankful that since 2 October 2009, I've been spending each year with this cutie-pie with the baby face:

I think it was September 29. The night D$ asked me on a date (over the phone, since we lived 4 hours apart), I went home to my beautiful friends Annie and Mary, and the following few hours played out like a fashion show. Living with your two best girls = endless fashion advice and 2 extra closets of clothes that aren't your own. The date wasn't until the end of the week, but I needed a good outfit ASAP.  In the end, I wore bell-bottom blue jeans (cute at the time), grey converse, and a purple sweater. (I'm glad I remember this outfit, because I forgot to take a picture that evening!) 

So in the late afternoon on October 2 I met D in a special location. I remember it was a mild evening, but the beautiful north Louisiana landscape was drenched in warm sunlight. I remember seeing D... he had on a checkered button up shirt (purple and tan on white), denim, and some nice looking boots. Although I didn't know it at the time, he had asked me to meet him at the place his grandfather liked to visit during his life... there's a bench there now in memorial to his grandfather. I didn't even notice the bench, though, because I was too distracted by the (figurative) butterflies. 

We hopped in his old red truck and made our way to... Piccadilly.

That's right, Piccadilly. The cafeteria. You see, while we were in Haiti, our entire team dreamt of food. It seemed to be the topic of many conversations... sushi, pancakes, hot wings and milk, Dinty Moore, and Piccadilly. I remember telling Daniel that when my sister and I were young, that's where my mom would take us for special occasions. We LOVED Piccadilly*. The cubes of blue jello at the start of the line... the fried fish... the ROLLS... endless sweet tea. It was like heaven on earth for little girls (and older couples). But what I remember most about our childhood Piccadilly outings, which I told Daniel while we were in Haiti, were the Andes mints. When we Mom would pay at the end of our meal, there was always a small box of Andes mints for 5¢ each. Mom would buy each of us one mint but make us wait until we got home to eat them. We would eat the mints on the front porch, and then roll up the wrappers into little balls and see who could throw them the farthest. They always ended up landing in the monkey grass... and I seem to recall Meghan digging her wrapper-ball out for a re-throw a couple of times. Fond K Street memories. :)

Piccadilly with Daniel was seriously hilarious. We were notably the youngest people eating there at 6pm on a Friday. Nonetheless, the food was good and the company was even better. When we paid, D bought two Andes mints and tucked them away... I figured he was saving them for later. 

Another thing I didn't realize at the time: Daniel was basically "winging" our date. I've heard him say he thought about taking me to a movie but then didn't look up times? (Not sure if I have this information totally correct.) So he just picked me up, took me to eat, and was, from that point on, flying by the seat of his pants. He (casually, as though planned) suggested that we go for coffee at Books-a-Million and then walk around the park by the river. I thought that sounded great! Pumpkin Spice Latte and fall weather walks are among some of my favorites. However, once we made it to the park we saw a large group of people making their way into this local museum/garden called The Biedenharn. We walked closer to see what was happening, and the greeter invited us inside. It turned out that the museum was offering free dance lessons that very evening (waltz and west coast swing) for 3 hours under the stars... and, naturally, we arrived right on time.

We were pretty excited and spent the whole night dancing; the weather was amazing, the instructor was easy to follow, and my dance partner was (obviously) dreamy. My cheeks hurt from smiling by the end of those three hours, but I didn't want the night to end. Unbeknownst to either of us that evening, only 2 years and 2 weeks later on October 15, 2011, Daniel would propose to me in that very garden. 

When we left we walked a bit and chatted about bits and bobs. When we made it back to where my car was parked, D took out the two Andes mints. We sat on the curb, ate the mints, balled up the wrappers, and threw them as far as we could. We said goodbye and I made my way home... pretty sure I called Annie and Mary ASAP to fill them in on every single detail. Also pretty sure I was too giddy to sleep that night. That first date... it was orchestrated by God. And it was perfect.


Delighted that our first date turned into many more and brought us to where we are now. Undeserving of this great love. Thankful for all God's provisions since October 2, 2009.

happy first Scottiversary to us!

Today marks one year that we've lived in Scotland. Woah.

This time last year, we were arriving to Edinburgh, 4 suitcases + 4 carryons  + 2 deer-in-the-headlights looks alighting the train at Edinburgh Waverley, [unsuccessfully] trying to roll our bags across the bumpy stones, exiting onto Princes Street with all bags in tow, only to be told we needed to go back through the station and exit at the opposite side (Market Street) to find a taxi. If ever there were two people who stood out as newbs, WE were those people that day. 

Boy did we learn a lot in the 365 days following that one.

Moving abroad changes you. Really, ANY move changes you. I think it shapes and develops your character, your endurance, and most certainly your patience! Both times I've moved I'm certain God used it as a way to show me that he always provides for our needs. So often I seem to forget how faithful he is. But he shows himself true to his promises every single time. 

Here are a few of my favorite, unexpected gifts from this past year in Edinburgh: 

- the amazing New College community that welcomed us with open arms
- BOOK CLUB!
- two adorable Hewitt children that stole my heart (and now a third!)
- being able to practice Spanish with students from Spain to whom I teach English. :)
- all of our amazing, fun, out-of-town guests
- ... and so much more. This list could go on and on.

I'm so thankful for the opportunity to live in Edinburgh. The first year flew by, so I know I'll need to cherish and enjoy every minute of our remaining time here. Don't forget to come visit... you know you'll have a place to stay! :)

oh, by the way, we moved to Scotland!



Yes, it's true. Daniel and I relocated to Edinburgh [ed-in-bur-uh], Scotland on 4 September 2014. If you're reading my blog (anybody?) you probably already know this. Because I post (as both the French AND South-Louisianians say) "beaucoup" pictures. 

We really like love living in Edinburgh. We think it has the best of everything you could want in a city... the greenest parks, the cutest cafes, the cosiest pubs, the friendliest people, and the list goes on and on. We love being able to walk everywhere. We love our "wee" flat, our friends, and everything about this beautiful country. *except for maybe the weather* I strongly urge you to come visit while we are living here. We'd be happy to host, and you would not be disappointed! 

About 8 months into our Edinburgh life D and I visited the US for about a month. It. Was. Great! We loved seeing friends and family while home. It was comfortable being in the culture we were raised in. We travelled so much, visiting north and south Louisiana, Oklahoma, and Kansas. I was thankful for that refreshing trip, seeing loved ones and eating too much Chick-fil-a. While we were home I spoke to several people about my #todayinedinburgh photos. It was amazing to see how many people were following our journey via social media. Helps me feel like my loved ones are less far away. People had nothing but nice things to say: "your pictures are so beautiful," "Edinburgh looks like an amazing place," "it's so neat to follow you guys in the UK." And also things like: "you guys are really living the dream," "how lucky you are to live in Scotland," "your life is like a movie." 

So, I'm writing this blog post to address the latter series of comments.

We feel so thankful that God chose to bring us to Scotland, because we really do love it here. We also trust that, no matter where we are, God will provide for our needs. And He most certainly has! Sometimes we'll say to each other (almost a year later) "Wow... we actually LIVE here!" because it's not something either of us would have ever expected. But, as the saying goes, the grass is always greener on the other side. And in this case, while the grass LITERALLY is greener, I want to tell you that we have faced our share of hardships, but we are thankful for the hope we have that God will walk us through and provide for our needs. Take this, for instance...

When I post pictures of bright sun shining beautifully into our back bedroom it's because I've been inside all day and that was the ONLY 5 SECONDS OF THE DAY that the sun came out. What. The. Heck. Scotland?!?!


When I post pictures of tea and biscuits in bed, it's because I'm having hot tea under the covers in the middle of the day because it's FREEZING in our flat and we're too cheap to start using the heat in early October.


When I post pictures of romantic early-morning adventures with my sweet boo-thang, it's because the forecast for THE NEXT 36 HOURS is RAIN!!!!! So we better get out at 8am and enjoy the clear skies before it starts raining by lunch. 


When I post pictures of our roast chicken for #thanksgivinginedinburgh, I'm roasting a chicken because the only fresh turkey I could find was nearly $100. Heck to the no. 


When I post picturesque twilight silhouettes of church spires, just keep in mind that twilight in December was at 4pm. NOT. COOL.


Also 3:30pm sunsets in January..


When I post pictures of snowy fields, just remember that I usually WALK to work. about 2 miles, and yes, uphill. 


When I post pictures of gorgeous flower gardens, please know that it's the only 10 minutes of the day that the grey skies briefly shared with the sun.


When I post pictures of ancient castle ruins, bear in mind that the only reason we went there was because we won free train tickets and were able to enter at no cost. We packed a lunch. I don't even like packing my lunch.


The list goes on and on. Like, for example..
- Scottish Power is the UK equivalent of Comcast.
- I work 3 jobs, that, inconveniently, aren't close to one another. 
- Exciting things happen in the lives of our family members and friends back home, but we miss out. 

SO, what?

Here's the bottom line: most people nobody has a perfect/dreamy/movie-like life. We all have difficulties and hard times in life, regardless of what we post on social media for the world to see. And I've realized that, without meaning to, I've made my life seem like it's full of adventures and excitement. But in all actuality, it's probably a lot like yours! 

Love where you live, because God has put you there for a reason. Enjoy the little things, like sunshine, free day trips, bright colored flowers, delicious CHICKEN at Thanksgiving, etc., because they are so often the biggest blessings. And don't be too discouraged from the hard things in life [I'm preaching to the choir, here], but have hope and see it at work all around you.

it's been awhile...

Hello there, blogger world! I'm back again, this time as a year-and-three-month-official "Jackson." I'm going to try to avoid a total life recap, but here are some pics of the high points that have happened since the last time I posted, in picture version:


July 14, 2012 - Married my best friend, D-money (aka, Hubsby).

July 15-25, 2012 - Honeymooned in Guatemala (highly recommended!)


 August 5, 2012 - Moved our little family to Maryland.

December 2012 - Witnessed the weddings of two beautiful and sweet friends.

 February 12, 2013 - Spent my first ever Mardi Gras in school. (totally weird)

 March/April 2013 - Watched cherry blossom trees bloom right outside my window. :)

 May 16, 2013 - Supported my hubsby as he graduated from St. Mary's. YAY hubs!

 May 18, 2013 - Took my sweet sister Meghan and her cutie boyfriend Taylor to D.C. for a FULL day of pho-less fun! 

 June 14, 2013 - Finished my FIRST YEAR OF TEACHING! :) *Best day of 2013*

June 29, 2013 - Visited Mamita & Thai in Anguilla.

July 14, 2013 - Celebrated one year of marriage with this cutie pie! 

August 7, 2013 - Met our new niece, Magnolia Ruth, and played with our sweet Molly Marie!

August 10, 2013 - FINALLY MADE THIS HAPPEN! :) :) :)


Overall, 2012-2013 was an interesting, growing year. I learned a lot, and I know that this experience (new job, new marriage, new part of the country, etc.) has really been blessed by God. Looking back, I can see the many ways He provided for us during that transitional time, and I am so thankful. He's answered so many of our prayers. But I have to say, the most encouraging prayer answered that we really needed this year has been the blessing of friends. I like to consider myself a pretty social person, but making friends in a new place was really a challenge. However, after several months of prayer we've found some keepers that have so positively impacted our lives. 

Introducing our "Maryland" friends:

Meet Rebecca & Rachael. These two sweet sisters helped me make it through a rough spring, and celebrated with me throughout the summer and now into the fall. I work(ed) with both of them, but this year Rachael has moved to a nearby elementary school. I know I couldn't make it through without their love and support (and funny texts, and encouragements, etc.). THANK YOU BOTH!


Meet Jared & Jacob. These are our southern friends (from Georgia) who have shared many-a-meal with us throughout this year. They are so supportive and fun to be around, and their friendships came at just the right time. THANK YOU BOTH! 


Last but not least, meet the Parsley family. The pastor of the church we attend and his lovely family have been such a source of encouragement and southern-comfort since our first Sunday in Maryland. We love spending time talking, eating, and laughing with these folks! Also, we LOVE that Tim and Crissa share our anniversary. Thank you all for sharing your life and love with us. 

We are so thankful for these lovely people (and many others) that have helped us make a smooth transition from Louisiana to Maryland. :)



The school year for 2013-2014 has begun and is currently in full-swing. People were not kidding when they said the second year is easier (ptL!), but that doesn't stop me from counting down until EVERY SINGLE DAY OFF (only 33 more until Thanksgiving break)!  *not sharrie*

falling in love

I think we all know that love is a choice. I have heard it, read it, and even experienced it many times throughout this engagement season. Love is not something we are naturally inclined to do, but we do it by the grace of God -- all glory to Him, because He loved us first and demonstrated His love in a way we never could. Love is more than just a feeling... it's an action, it's a belief, and it's the very essence of God Himself. I believe that going into our marriage knowing where our love for each other comes from will make a huge impact in the growth of our relationship.

However, there is certainly a difference in choosing to love and falling in love, because falling in love isn't much of a choice! 

In the midst of all the wedding planning and moving preparation I've had some time to reflect on my relationship with Daniel: the past, present, and exciting new future. As we have begun talking about and writing out our vows for one another, I have had moments where I thought, "Can I remember the moment when I fell in love with Daniel?" I clearly remember the first time he told me he loved me, and the first time I told him back (not on the same occasion, by the way). But do I remember the moment when I really, truly fell in love with the man I am marrying in 16 days? **ONLY 16 DAYS!!** Being a little nostalgic lately, it wasn't hard for me to dig back into that "memories to keep forever" part of my brain, and I'm pretty certain I've pinpointed the exact moment in which I really fell in love with D. Don't get me wrong, it was certainly a process and continues to be, because I find myself falling more in love daily. But I wanted to share this one particular moment where things clicked for me. So here it is.. whoever you are reading out there.


Falling in love with Daniel:

We had been talking/dating for only a few months, and at this point he had already expressed his love for me. His words were honest and true, coming from the depths of his heart, when he first told me. But I wanted to be fully convicted and sure of my love for him before I said the words, and he respected that. We spent our first Christmas as a couple apart from each other, but when we were reunited he was bursting at the seams for me to open my Christmas gift from him. I can still remember everything he gave me that Christmas: a super cute purple scarf, some sweet smelling lotion, a CD with some of our favorite songs, and a poem he wrote for me. I read the poem last... and that's when I knew. And it was around that time that I first told him of my love for him. :) Kee! Read the poem for yourself and see if YOU don't fall in love with him!! (But please don't. He's taken!)



A Summer Night In Haiti, by Walter Daniel Jackson

On rocky road and dusty trail we walked into the night
under the moon and starry sky, and guided by its light.
We walked along, just barely seen, on Haiti's dusty way.
I can't think of a better way to end a summer's day.


The day was hot and summer's heat had shined upon us true.

But as we walked, two people there, as missionary guides

I know that love is a choice, and that sometimes it's easier than others. But, in the future, if there are times when choosing to love gets hard, I believe I will always be able to come back to this beautifully written poem and fall in love with Mr. Daniel more and more. :)

T minus one month

Daniel and I currently are one month (thirty days) away from the most exciting day of our relationship... a day that will change our lives and the lives of many others forever. The day when Miss Rebecca Mary Griggs becomes Mrs. Rebecca Mary Jackson, bride of Mr. Walter Daniel Jackson. July 14, 2012: The newest best day ever. :)

You know, many people told us not to have a long engagement, because from their experiences the engagement seemed to pass slowly. I, however, have not had nearly the same experience as these advice givers. D and I will have a nine month engagement, and every single minute has been so enjoyable and has gone by in the blink of an eye. It seems like just yesterday that I couldn't take my eyes off that pretty ring (oh wait... that was yesterday!). But seriously, this time has flown by, and I still have so much to do over the next 30 days!! I'd like to think that two weeks out from the wedding I'll have everything done and be able to rest, pack, and prepare for the craziness to come, but in the back of my mind I know that's wishful thinking. Here's a little snippet of my list of things to do, which seems to keep growing:

- mail out CD's to musicians
- get dress alterations  
- decide on dress jewelry
- find a job 
- stop biting my fingernails
- make a list for the photographer
- get marriage license
- whiten teeth
- thank you cards galore
... etc.

But having such a long to-do list has never been so fun! I can't wait to hear what the musicians think of the music... SO ready to see the dress on!, and I'm looking forward to hearing back from principals (which has already started, praise the Lord). Yeah, yeah... I need to stop biting my fingernails... but that's been on my to-do list for life. And as for the marriage license, we have to take a ferry to pick it up at the clerk of court. A FERRY! I'm *almost* more excited about the ferry ride than the marriage license. So, I'll keep you folks posted (if I can squeeze in time) on my to-do list progress.

Hoping some of you got your wedding invitations in the mail this week! I smile every day when I open the mail box and see more response cards waiting for me... it's like Christmas every day at 4:30 pm! Please enjoy those invitations and keep them forever... because they took WAY more time and work than I expected. 
Seriously. Don't thrown them away. You should probably scrapbook them or something... yes, even you, friend of a friend of the family. ;)



I know I can speak for Daniel on this one: WE ARE SO EXCITED FOR JULY 14!!! :)

happy birthday, D!

May 13th is one of my favorite days of the year, because it is the day we celebrate the birth of my sweet Daniel. I know this blog post is a little late, but I couldn't resist posting a "happy birthday" post for the best man I know.

This May, my fiancĂ© turned 25 -- that's a quarter of a century old! I can hardly believe it! It seems like just yesterday we were celebrating his 24th birthday in uptown New Orleans (see pics below). And now here we are, celebrating 25 wonderful years of life, and thankful for every day more that God gives us.

This year's birthday was wedged between some VERY important celebrations. On May 12th we celebrated his seminary graduation, and on his birthday, May 13th, we also celebrated our lovely moms. The weekend was full, to say the least, and so were our tummies! But I couldn't resist making a birthday cake for the full stuffed birthday boy. And I made it wedding cake flavored... you know, to get ready for the upcoming nuptials! :)

I love you, Daniel Jackson. Happy 25 years of life... excited to spend this 26th year of your life as your wife, and to celebrate all of the birthdays the Lord gives us together!

alumni status

This school year has been a very important one for both me and Daniel. We were engaged in October, are about to celebrate marriage, and have both completed degrees in our respective schools. YIPPIE! It was very exciting celebrating these two special occasions at the same time (although, fortunately on two different weekends). We also celebrated our wonderful mothers and the 25th birthday of D in between these two graduation festivities. Here are a few pictures from that special week:

Daniel with NOBTS President, Dr. Chuck Kelley

Daniel graduated from New Orleans Baptist Theological seminary with a Master of Divinity degree. He graduated with a 4.0 (my little smartie!), and has plans to continue his education in Baltimore, Maryland this fall. I'm so proud of him and all he's accomplished throughout his time at seminary; I SUPER look forward to where God leads him in his education and how He uses that in our lives and ministry together. Go Daniel!! :)

I, on the other hand, graduated with a Bachelor of Arts degree in Spanish with a concentration in Secondary Education (yes, it's a mouthful!). They surprised me with cords when I signed in before the commencement, which were certainly a welcomed accessory. :) Like Daniel, I also plan to return to school this upcoming fall in Baltimore... only this time as a teacher! Still on the job hunt, and praying to find a position soon. 

But I do have to say, I have loved *almost* every minute of LSU, and I will always be proud to be a TIGER! :)

that's two!

Thanks to my lovely sister Meghan Elizabeth, I've become a HUGE fan of the two cutie pies at the end of this video: 


Ask anyone: my roommates, Daniel, my students... my newest and most often-quoted phrase is "that's TWO!" Then of course you have to add to that phrase by saying, "two plus two... equals FIVE!" SO STINKING CUTE! Although I feel *slightly* bad for these poor children, the last two really bring a smile to my face. You sneaky little mom! 

But speaking of two, today my lovely wedding countdown told me that there are two months, two weeks, and two days left until the (greatest) day ever, July 14, 2012. That's TWO! :) 

And on this same subject of "two," Daniel will become an NOBTS graduate in only TWO short weeks, followed by his birthday the very next day. We will be celebrating TWO events on that weekend, and TWO people on his birthday... our moms! Can't believe he's already graduating. Sorry for the mushy sentiments, but it seriously seems like only yesterday he was moving into the dorm on campus to start his first semester as a graduate student. I'm so proud of how far he's made it in school, and I am thankful to see his example of hard work and dedication to both his education and his spiritual life. This challenges and encourages me, and I am greatly looking forward to supporting him throughout his next and (almost) final phase of his education... although I know he'll never stop learning! :)

Speaking of graduating, I am a soon-to-be alumni of Louisiana State University, officially holding a Bachelor's of Art in Spanish on Friday, May 18th at 4:30PM. I'm super excited! (well, not so much for the ceremony... but for the finished-with-school-for-now part). LSU has been good to me, and my time as a student here has been some of the best years of my life. However, I am joyously anticipating this next phase in life with my hubby-to-be as we begin our great adventure! (Still looking for a Spanish teaching job in Baltimore -- prayers welcomed and appreciated.)

the countdown continues

100 more days! 

I can hardly believe the time has passed so quickly. It feels like just yesterday THIS was happening, and now all-of-the-sudden, we have a little over three months to do a WHOLE lot of planning and preparation for marriage. I want to soak in everything special that happens in these next 100 days as we look forward to how our lives change on July 14th, when the Lord unites us as one. 

On a side note, I recently re-discovered my 5th grade social studies fair project, in which I researched the history of dentistry (typical dentist's child, I know). I particularly liked the smiley-face boarder and the "cavity monster." Such creativity at such a young age... ;) hehehe!

planning

"If I could sum up this entire semester in one word, I would (without hesitation) choose the word PLANNING."

I think I've made this statement to about 30 people in the past week... and it's so true! Planning, planning, and more planning is what my days are full of. It's either wedding planning or lesson planning, and in both cases I'm typically behind trying to catch up. 

And I love it. :)

However, this planning period has resulted in blog negligence, which does not help my (few, if any) readers stay up-to-date on student teaching and wedding details... so let me try to fill you in. Let's start with student teaching. 

BRUSLY HIGH SCHOOL- 
My student teaching semester has been such a blessing. God blessed me with a great mentor teacher and some fun Spanish students, and I've learned so much being in the classroom all day long, 5 days a week. It's hard to believe that 10 full weeks have already been completed (333 hours, y'all), and I only lack one month until the end of this special season in my teaching career. And then... GRADUATION! It's been a really great semester.

WEDDING-

Nine lovely ladies from CrossPoint, led by Mrs. Meagan Jenkins, threw me a beautiful bridal shower this past Sunday for which I am so thankful. And more plans are soon to be made as I go home for Easter break. :)

POST-WEDDING-
I had my first "official" job interview with a school district and am antsy to hear back from them. D and I went to visit Baltimore, MD about two weekends ago, and we are now in the process of making plans to move there, following the lead of the Spirit. We don't know all the details about this, either, but we definitely are excited for whatever God's planned for the future.

I think that's a good place to start for the "catch-up." I'll try to be back soon for pics of student teaching and wedding planning. :)
